I'm here to provide more details on how invoicing works in QuickBooks Self Employed.

You can save the invoice as draft if you don't want to send them. 

Here's how:

  1. Click Invoices on the left menu.
  2. Click Create invoice on the upper part.
  3. Fill in the necessary information.
  4. Click the drop-down arrow beside Send invoice and select Save as draft.
However, you can't mark an invoice as paid without sending them. If creating an invoice is only for tracking purposes, you can provide a dummy email address so you can send it and mark it as PAID.
