Undeposited Funds conflict with Merchant Services Deposits

US QuickBooks Pro for Windows : 2011

I do not want to use Undeposited Funds to deposit payments. I do not want payments automatically deposited to checking. How do I turn off Undeposited Funds, and auto posting to checking? How to I clear the Undeposited Funds account?

Sounds like this is either retail or a restaurant.

I record our retail and restaurant clients sales using "Sales Receipts". I match the amount on the Sales Receipt to the deposit for that day.

When using Sales Receipts you can also create "items" if you want to track things like:

"Lunch Sales"

"Supper Sales"

"Liquor Sales" etc.
