Should I keep this info?

I'm starting a catering company from home, to get revenue up so I can obtain the right trademarks and paperwork concerning it , how much information should I keep since some profit will be made before paperwork is done? I would not be able to record that (before paperwork profit) right?

Oh yes, keep detailed records of your income and expenses now. The IRS doesn't really care if you have not officially set up your business on "paper".  Here's a nice resource for new business owners who want to know some of their IRS obligations. Click Here. It's set up like a calendar but there is some very good information in it for small business owners.
