create an expense account called Freight Charges. that's for when you pay for postage or UPS, etc.
create an "other charge" item called Shipping and Handling. that's what you put on the invoice to your customer. you can pass on the exact cost of freight to the customer, or you have the option of marking up the freight on your shipping & handling.

the incoming freight expense is COGS. the shipping is income.
