Yes you can. From the Lists menu, choose 'Item List'. Double click an existing item or click the Item button and click New. On this window, click the button called 'Custiom Fields'. On the Custom Fields window, click on the 'Define Fields' button. This is where you can create new fields. Just remember to put a check mark beside the field name you create. These new fields you create can also be added as columns to your custom invoice templates.
