Restaurant with Wi-Fi for customers considering POS system

Small counter-order restaurant with Wi-Fi for customers wants to use POS at register, with QBF in back office. Intuit POS reps mentioned we need to set up a firewall system to restrict access to network with POS installed at cash register, and POS and QBF at back office. Also want to incorporate Wall St Jnl's suggestion to cut off access to internet for cash register computer with POS. How can this be done?
