I see now that everytime I started over and entered the quantity the invoice was automatically created without my clicking on Save & Close. I thought I would get a chance to preview all of the information automatically filled in after entering the quantity and then either Save & Close or Clear if desired. That didn't happen. Why not?
In the sample company>go to Customers>Create invoice>select a customer and use a date range outside of what is showing on the invoice so that you can see what results occur by entering the information you are entering and then you may create new items and enter quantities and experiment.

I finally figured out my problem had nothing to do with the date showing on the invoice. My problem was that I was pressing Enter after typing in the Quantity instead of using the Tab key after typing in the Quantity.
Why was my question tagged "The asker has indicated that he or she still needs more help with this question." when I marked it as solved?
