I have enhanced payroll with a few clients on the list. How can I tell if a client I formerly did payroll for is still using my tables?

Your client should not have your tax tables or subscription. If you did mistakenly setup your client at their place of business with your subscription, then they have access to your account and could change it at any time.
Avoid this by never giving out your subscription to other users or companies. It's for you to use, not your clients to use on their computers.
You can fix this for this client by calling them and having them remove your subscription from the file using the Manage Service Key window.
