How do you enter estimates for jobs, create invoices from estimates to track job costs and profitability of jobs? Where do I get the process for this? How much setup is needed?

You may need to take a class, or hire a local expert. Your question doesn't really lend itself to a short answer. Spend some time with the sample contractor business file, and you will see how it is done. Close your company file (File > Close Company), and at the No Company Open screen, click the lower right button Open a sample file and choose the sample contractor file.
