Is there a way to automate the export process for the extraction of documents?

Here is my issue: I can do a backup of all of the data, but there is no way to restore a single document from that backup that is created. So, looking at the export process, we can get a "backup" of individual documents to a seperate file location  should we need to access a trashed document. BUT, the export feature is so slow that it would take all day to run againist our database. We have close to 58 gig of data stored now, and growing quickly. I get the idea of a complete backup, but would like to know if someone has an idea of how to develop a *.cmd file or similar type process to schedule the export to run after hours?  Thanks to all who consider this.
