When I post a deposit to the "INCOME" account, we create a JE to post it to "ACCOUNTS RECIEVABLE". This creates an Invoice. My boss does not want invoices which is why we do the JE. How do i get it to stop creating the invoices??
When you make an A/R transaction to QB, the way QB works is to create an invoice. That is how the program works. You don't have to print or view the invoice. But that is part of the functionality of QB.

the problem is mainly happening when i go into record deposits it will tell me there is open invoices for a certain customer job such as Client Pay. I can not apply these payments to an invoice cuz its not a real invoice.
So if QB auto creates an invoice, how do I get QB to apply the payments to the invoices?? (the invoices are created at the end of the month AFTER all payments have already been rrecieved and recorded.)
Try to "Receive Payment" from the Client Pay customer. You should receive a 0.00 payment, but QB should show all the "outstanding invoices" and the total of the payments as a credit. You would need to click on one of the invoices, then click on Credits and Discounts, and apply the credit. Try it.
For the future, you do not need to record the deposits as journal entries into Accounts Receivable. What if you just use the income account on a deposit screen? Or if you want to keep track of the customers, use Sales Receipts to record the income.
