How can I enter payroll transactions without using the payroll service.
I only have 1 employee. How would you suggest that I make my entries in Quickbooks if I don't us the payroll service/

You could make a journal entry. An example would be:
DR Wages 1000.00
DR Payroll Tax Expense 76.50
CR Fed/State W/H Payable 100.00
CR SS/Med Payable 153.00
CR Cash (Net Pay) 823.50
