Customizing item master
Is it possible to build an item by class? If a 'define field' is created can it be added to the item master? Is there a way to change the options available to build an assembly?

You have asked a lot of generic questions.
"Class" has a specific meaning in QB. It is a crossreference for operations, so that you can run reports by Division, Department or Office Location. It has nothing to do with setting up Items.
You have lots of custom fields options, but usually there already is something you can use. Custom fields have limited reportability.
What kind of options do you want to change for Assemblies? Perhaps you shouldn't be using Assemblies at all, in this case.
It sometimes is easier if you tell us what specifically you are trying to accomplish, rather than asking how you can accomplish something you haven't explained yet.
One of my clients uses classes for paint colors. When invoicing, 'class' is used to show what color the frames would be. Currently, they do not use the inventory feature, but would like to. Unfortunately, for every item sold, depending on the paint would determine the color of glides that are being used. If the class were available we would be able to create an inventory system that would relieve the proper units of paint and glides without having to create a different item for every color frame.



Okay, that helps.
Let's stop using the word Class. If they are using QB, time to come up with a different word.
So, let's call them, I don't know, how about Color Codes? Yeah.
So, in QB above Pro, you have the option to set up Group Items and Assembly items. I think your client will like Group Items.
First, you set up the various items: services, noninventory, inventory, other charges (such as Shipping), etc.
Let's pretend there is a set of Frames and a set of Glides, and for all the Brown frames we use the same glides that are generically brown.
Now, create a Group item for the Tan Frames. Internally, for this group, we list Frame and Brown Glide and tan paint.
Create a Group item for the Charcoal Frames. Internally, for this group, we list Frame and Brown Glide and charcoal paint.
Etc.

If these are preassembled and held in stock, then you would use Assembly instead of Group.
