Income Stmt, COGS & Expenses

How can I set up the Income Statement to show COGS, and subtotal and then overhead expenses? Labor
 

should also be split billable and non-billable.

Set up COGS and Labor as COGS accounts. Then set up individual accounts (ie. billable, nonbillable, parts, etc.) as sub accounts under their corresponding Account (COGS or Labor).
