how can I set up quickbooks for my diesel shop where my trucks are my costomers. How can I create a workorder that shows work done to a vehicle and the parts used? Is there a verson for mechanic's shops?

You could use sales orders (available only in premier editions) to keep track and a data base of work performed and parts used. And, from the sales order, invoices can be prepared.
I am not clear what you mean by truck as customer. If you mean tracking repair expenses for each company truck, you could do this by setting up each truck as a job, and on payment forms select the job.
