You should be able to go to your customer center, click on New Customer/Job and choose New Customer.
In this New Customer window, you can enter as much information that is currently available to you at the time and save. Then once you know the other information, like the opening balance, contact info, etc, you can reopen the customer information and enter it at that time.

You can only enter the opening balance when you add a new customer--not later when you edit the customer. But, you should ONLY enter an opening balance if there was a balance when you first set up QuickBooks. Even then, it is preferable to enter invoices for the balance as of the start date.
