Hello! I actually have a several "packaged" help lists and startup guides for pet care businesses. I have experience setting up a pet sitting organization and doggy daycare that I later sold! But to answer your question -if you operate as a sole propriter you will be paying anyone who works for you - as an independent contractor. (Be sure to have them sign independent contractor agreement!)
If you believe that your revenues will be at a certain amount / and or to ensure protection of your personal assets you may want to consider LLC or Corp depending on your state and your goals for the business. This actually can be a very comlplicated answer and always suggest using a consultant when trying to determine the best structure.
