Since 2007 your payroll forms have been updated and will not produce an 2007 form.
Did you have a archived backup from early 2008 or before. That company file would probably print it.
I take it you did not keep a paper copy of W-2's issued to employees? If you did, just make a copy of it and give the employee. I do no think the type of form W-2 for SSA or employer copy matters, the employee just needs to submit something that has the withholding on it for federal/state tax return.
Many CPA and bookkeepers keep prior year blank forms for just such a reason, ask around, you will find someone that will give you one.

You're actually required to keep copies of your W2s (that's why there is a company copy) and one use of those company copies is to use them to make a copy of for employees who ask.
QuickBooks does also have a print to PDF feature you can use to keep an electronic copy.
My bookkeeper was out of town and I thought I could easily re-print the W-2. I eventually found the copy that IS in the files, so no worry that we did not follow that requirement.
