I have a security company that i am trying to set up. What industry should i use from the list?

Any one of them that seems close to what you do. The Interview is going to make some suggestions and some settings, all of which is under your control to revise once there is a company file, so in a way, it isn't critical, it's only helpful.
If you have inventory, go with Retail or Online Sales. Or, no inventory, go with Professional Services.
You can rename, add and delete anything you want, once the file is created.
