Can I upgrade from an non-profit version to an accountant's version?

1. If so, will I be able to select more than one type of industry (e.g. non-profit and professional services and/or contractors)?

2. Will my current payroll subscription convert as well?

Your data will move to any version.

The accountant's version has the ability to "toggle" and appear like any other version. You can see all of the functions if you just stay working in the Accountant's view, though. There's no need to toggle it, really.

A subscription to payroll is just like a magazine. Just because you move, the magazine continues to come until the subscription runs out. The payroll subscription is part of the data file, it moves with the data file to the newer version of QB.
