how can I remove line items from Statement writer statements that don't apply? If I use the delete function in stmt writer, the Net income totals disappear. I for instance don't need a COGS line or total, but Net income disappears.

Not sure why it is doing that...the delete should work. Alternatively, you can hide that section.

If your net income line is being calculated using the COGS line, then maybe you need to adjust your net income line formula and remove the COGS line from that formula.
