Client spouse has a position as a day care worker at a college, takes college classes , paid for by college. College lists her as student worker, and says no taxes need to be removed from her salary. Is this correct?

Work performed for the college by a student enrolled at least half-time is exempt from FICA and medicare taxes. The wages are subject to federal and state income taxes but whether or not these are withheld depends on the gross wages and the W-4 filing status.

Normally they do not have to withhold  FICA Taxes or Federal Taxes if the student is at least a half time student. The person in question will be subject to Federal Taxation and state Income Taxes if in a sate that has State taxes
