I just upgraded to Pro 2009. Where did the insurance fields (and notifications) go for subcontractors?

The insurance fields you are referring to are available in Premier Contractors Edition.

You can create a custom field for tracking the expiration date. Pro doesn't have the fields you saw in Contractors Premier edition.
