You can delete the build. Open the build > Edit menu > Delete

That isn't a classic disassembly - that is just reversing a build that you have already done. If you are looking to take an assembly item that has a BOM and break it down into its components, WITHOUT going back in time to just delete a prior build, there isn't a function to do this in QuickBooks.
This is something that is done by people who purchase items and then pull out components to use (and similar operations). You have to just do inventory adjustments for the components and assembly, manually.
