Chart of Accounts Definition
where do I define the chart of accounts? How can I define various subaccounts?
Can I break out the 8 digit account number in any configuration I want? i.e. account-department-division XXXX-XXX-X?

The solution
The account number is 7 characters & you can use it any way you like. It would include the dashes.
List menu > Chart of Accounts.
There you can modify the chart or add new accounts & sub accounts.
I would use Classes for Department & Division ¬ bog down the chart of accounts.
Edit menu > Preferences > Accounting > Company Preference Tab > Check off "Use Class Tracking"
