Inventory QB Pro & QB POS

I use quickbooks pro and quickbooks POS. In the POS we have inventory items set up and it tracks the inventory. I also have inventory items set up in Quickbooks pro for invoice purposes, should I be adjusting the on hand qty in quickbooks pro?

No--if you're using QuickBooks POS, then all the inventory and sales details should be kept in the POS system.  I usually have it set up to send summary totals to QuickBooks Pro.
