How to handle joining fees?

We are a vegetable grower and to be able to sell to one of the big supermarkets they take joining fees. but rather then taking the money up front, they deduct the amount from the goods delivered. What do I do with this amount? Do I write it off (if yes how?) or do i book it as discount? How can I see when I reached the agreed amount so that i can start sending out the invoice.
