You can not "undelete" a transaction, such as an estimate once it is deleted. You can look in a backup of QB if the estimate was created prior to your last backup.
Additionally, the Audit Trail report will provide you with the date, number, customer, memo, accounts, and amounts. If you modify the report you can add the item to the report. You can then recreate the estimate based upon the Audit Trail details.
